Mark Pepper's Vegan Pasta
Ingredients
(SERVINGS: 4 people)
1 pound baby broccoli
1 small onion
4 cloves garlic
1/4 cup nutritional yeast
Cashew milk
1 pound whole wheat pasta
Olive oil
Salt and pepper to taste
1) Start by steaming garlic and onion for a few minutes till they begin to get soft. Then add baby broccoli and steam till just tender. It should still be a nice dark green color, not pale.
2) let cool and then blend up with nutritional yeast, olive oil, salt, pepper, and enough cashew milk
to blend it smooth.
3) Cook pasta in salted water and then drain, reserving about half a cup of pasta water.
Dump the pasta and the 1/2 cup pasta water back into the cooking pot and stir in the broccoli sauce.
Taste and add additional salt, pepper, nutritional yeast, and olive oil to taste.
